How gorgeous is this salad? My mom introduced me to this salad recently and it is now my absolute favorite salad! I love how filling it is with the addition of avocados and almonds. It is such a simple salad to make and is perfect for the summer. Serve it extra cold during a hot summer day and it will be so refreshing and delicious!
- 1 pkg. of romaine lettuce
- 1 pkg. of spring mix
- 1 can of mandarin oranges, drained
- 1/2 a red onion, diced
- grape tomatoes, halved
- 1 avocado, diced
- 1 red bell pepper, diced
- dried craisins
- toasted sliced almonds (please do not skip out on these – the crunchy sweetness of these toasted almonds definitely make the salad! directions below)
To toast almonds: heat up a large skillet on low/medium heat, add almonds, gently stir and heat until light golden brown (keep a close watch and keep stirring because they burn easily), sprinkle desired amount of sugar (about 1 teaspoon), cool off on wax paper, sprinkle on salad right before serving, store extra in an airtight container
This raspberry vinaigrette dressing pairs perfectly with this salad.
Turn this salad into a main dish by adding some chicken or steak to it.
